A Cake That Is Perfect For Hot Summer Days

This recipe will help you get rid of your guilt when you consume cream laden cakes as it is a different and healthier version of the usual cakes we bake.

Cake with lemon curd and rhubarb

This is a cake made of lemon sponge that is topped with rhubarb which comes with tender and pink pieces. The cream frosting of lemon curd will surely make it a healthy cake to consume in the summer months. Usually cakes with cream frosting are avoided during the summer months. The excess creamy fat does not suit one’s system in hot times. It not only adds on extra calories, but can lead to excess skin oil secretion which increases acne problem in many people. For these reasons, when it is hot and humid, you would not feel great about a heavily layered and frosted cake for dessert. This recipe has been created, keeping in mind the ingredients that work well during the summer months.

Ingredients required

  • 225 gm of unsalted butter
  • 225 gm of castor sugar
  • 1 lemon zest
  • 4 eggs
  • 75 gm of ground almond
  • 200 gm of flour
  • 140 gm of rhubarb, sliced
  • 75 ml of cream for frosting
  • 3 tbsp of lemon curd

How to make?

Start by preheating the oven at 180 degree Centigrade. Butter and dust with flour a cake tin that is 20 cm in diameter. Line the tin with a baking parchment to make it non sticky. Add butter in a bowl and beat with an electric mixer till it turns fluffy and light. Then add in caster sugar and lemon zest. Beat on as you add eggs to this mixture. The end result should be a glossy batter. In case there is curdling add in ground almonds which will make the mixture turn smooth. Add the remaining amount of ground almonds along with flour. Fold in remaining ingredients and mix with a large ladle. Add in half amount of rhubarb. Transfer the mixture into the cake tin. Add the remaining slices of rhubarb. Sprinkle Demerara sugar on top. Bake the cake for forty five minutes. When the cake is baked through, transfer to to a wire rack. Allow it to cool down before adding the topping.

To make the topping, whip the cream in a bowl till soft peaks are formed. The lemon curd should be mixed with one tablespoon of water and folded into the cream. Do not work up the mixture. Spread this mixture over the cake. You could add on more of lemon curd if you want. However, the topping should be added when you are about to serve the cake.

Tuna Melts: A random song got tuna melts stuck in our heads, so we set out to perfect a recipe for them. Not sure if this is perfect, as prior to that I’d never had one, but it gets great reviews so it can’t be too bad!

Broccoli Salad Surprise: The reason ‘Surprise’ is in the recipe name is because of the unexpected ingredients but it is certainly one of the best surprises you’ll find! Plus, don’t tell anyone, it’s healthy! A definite must for any summer event, but honestly it’s a fabulous (make-ahead if you like) recipe year round!

Country Pasta Toss: Every BBQ, picnic and list of summer recipes should have this one on the menu! While it is super simple, it’s incredibly tasty!

Garden Fresh Corn Salad: No garden, no problem. You can hit up your local farmer’s market, use store bought vegetables or even sneak in canned. No matter how you do it, this summer recipe is absolutely wonderful!

Southern Macaroni Salad: These are a staple in the South and there are plenty of variations! This one, is of course, my own. Enjoy!

Potato Salad Battles…

A bit of personal background with these. Both my big sister and my sister-in-love once had a battle on the potato salad front. It amused me to no end and the delicious selections were always appreciated! My big sister loves her some German Potato Salad while my Sister-in-love had her own version of a more traditional recipe.

Neither of these are their recipes, but they are both fantastic and delicious. I’m pretty certain the two aforementioned sisters inspired me to create the posts below. I’m not getting in on whose is or was better. Unless, of course, they want to have an official battle, at which point I would happily judge!

Mock Welch’s Strawberry Popsicles: Growing up, Welch’s Popcicles were a summer staple after a long, hot play outside! These taste remarkably close to the way they did long ago, before all of the additives came along.

I highly recommend Ecozoi Popsicle Molds. I have a set and absolutely love them! It’s easy to get the popsicle out, they last forever (stainless steel) and they are better for the environment!

Party Perfect: Three Flavorful and Festive Recipes for a Summer Party

When the weather’s hot (Summer’s coming, we promise!) it’s hard not to crave something simple, refreshing and thirst quenching. We love how Justina Blakeney‘s menu for her fabulous Summer party for Pottery Barn does just that. Smoky and spicy margaritas, cool and crisp watermelon agua frescas and easy crab guacamole and chips are all it takes to quiet an appetite on a hot summer day.

Smoky Serrano Infused Margarita
Serves 6

For the Serrano-Infused Tequila:
1 medium sized serrano pepper
10 oz tequila (we used Don Julio Anejo)

Slice pepper in half lengthwise, leaving veins and seeds intact. Place pepper and tequila in a jar or bottle with a lid and let sit 24 hours (or longer, depending upon how spicy you like it).

For the Margarita:
1.5 cups fresh lime juice
1 orange, juiced
1/2 c simple syrup
1 c serrano infused tequila
1/2 c orange liqueur (Grand Marnier, triple sec, etc)
1 c soda water
Smoked sea salt
Lime wedges
Ice

In a pitcher, combine lime juice, orange juice and simple syrup- stir. Add tequila, triple sec, and soda water.

To prepare glasses, make a small slit in the lime wedges and place salt on a small plate or bowl. Run lime wedge around the rim of each glass, then dip glass into salt, turning until rim is coated.

Add ice to each glass and fill.

Watermelon Lime Agua Fresca
Serves 6

4 cups watermelon, cubed, seeds removed
1/2 cup freshly squeezed lime juice
4 T sugar
Lime slices for garnish

Add watermelon, lime juice, and sugar to blender pitcher. Puree until smooth. Serve over ice and garnish with lime slices.

Guacamole con Cangrejo: Crab Guacamole
Serves 6

2 perfectly ripe large avocados (or 3-4 small ones)
1/2 large white onion
1-2 roma tomatoes (depending on size)
1 bunch cilantro, washed and trimmed
1 lime
6 oz crab meat
Salt

Dice the tomato and onion and rough chop the cilantro- mix together in a small bowl. Set aside.

To prep the avocados, slice them in half lengthwise and remove the pits. Now make 4 lengthwise cuts to each half, without cutting through the skin, essentially scoring each half. This makes it easy to remove the flesh with a spoon. Once you’ve scored all your avocado, scoop the flesh out with a spoon into a large bowl. With a pastry blender or potato masher, mash the avocado slightly- there should still be chunks of avocado visible.

Now, gently fold the tomato-onion mixture and the crab meat into the avocado, careful not to over mix or break up the crab meat too much. Add the juice of one lime, and salt, to taste. Serve with tortillas chips.

*Safety note: Because of the crab meat, be sure to keep this guacamole on ice during your party.

Street Corn Salad (Serves 4-6)

Ingredients:

  • 3 cups corn (canned or cut from roasted cobs)
  • 6 slices cooked bacon
  • 1 tablespoon cilantro or parsley
  • 1 jalapeño, minced
  • 1/3 cup mayonnaise, or more to taste
  • Juice of 2 limes
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Kosher salt
  • Freshly ground black pepper
  • Cotilla cheese, optional, for garnish

In a large bowl, combine all ingredients except cotilla cheese. Stir until ingredients are completely mixed and coated in dressing. Garnish with additional cilantro or parsley, if desired, and cotilla cheese.
